Vegan Snack of Cashew Ricotta and Fruit

This fruit-forward, easy snack recipe is also a good meal prep idea because it freezes nicely and packs well for lunch!

This easy vegan snack is perfect for a take to work lunch!


The vegan ricotta recipe used to make this is itself good in the fridge for 4-5 days, so any leftovers I have I will snack on during that time. You can either create and eat this snack right away, or you can use it for meal prepping and put the servings in the freezer to use through the week! Conveniently, the full ricotta recipe makes enough for 7 servings.

A frozen serving takes about 3 hours at room temp to thaw, making it a great choice for lunch prepping!

Put it frozen into your lunch in the morning and, if kept at room temperature, by lunch it should be ready to eat and still cold! It can be eaten as a dessert or as a vegan snack.



What fruit is a good choice for this recipe?


Whatever fruit you most enjoy eating! I have enjoyed it with kiwis, mangos, blueberries, mixed frozen berries, mandarins, grapes, and blood oranges. I am sure it would also be tasty with pears, apples, pineapple, grapefruit, etc.


If you are planning to freeze for meal prepping:

Be sure you only use fruit that also freezes well. If you are unsure, or want to save money, you can top the ricotta with whatever cheap frozen fruit you can get from the store.


Although it works with bananas, I would not recommend using them if you're planning to freeze it.

Money Saving Tip:

  • Using frozen fruit is cheaper than using fresh.

Storage.

Can I freeze it? Yes! It will last in the freezer for 1 months. Thaw overnight in the fridge or at room temperature for about 3 hours. Do not microwave.
