This mango salsa recipe makes a healthy snack or appetizer!


If you need more healthy snack ideas you should definitely try this salsa. Loaded with fresh fruit and veggies, it's hard to get a nutritious side dish recipe also so full of flavor! Luckily it is naturally a vegetarian and vegan friendly appetizer, making it a great addition to any spread that easily spans multiple diet restrictions. Just pair it with chips!

This easy recipe goes especially well with tacos or burgers that feature fish! Use it by putting it on top of the tacos or burgers together with coleslaw and a chipotle mayo for a juicy and tantalizing experience. Also try it with pulled jackfruit for a vegan dinner idea!




Substitutions:


Substitution for Jalapenos: You can use Fresno chili peppers, serranoes or habaneros. If you are sensitive to spiciness and must use serranoes you can use just one or two and dice them finely.


Substitution for red bell pepper: You can also use a yellow bell pepper, but it will lose some visual appeal without the bright red color. Do not use green bell pepper if you can avoid it, it isn't as sweet.


Substitution for cilantro: If you don't like cilantro you can just leave it out.


Note about mangoes: This recipe is expecting you to use the large, standard green and pink mango. If you would rather use yellow mangoes you can, but you will probably need to use two since they are smaller.


Money Saving Tip

It is cheaper to buy bell peppers in the three pack. Just use the other peppers in some other tasty recipes!

Storage

This recipe is good in the fridge for 3-4 days.


Can I make this recipe ahead of time? You can make this recipe a few hours ahead of time, but I would not recommend making it more than 8 hours before if you have added the salt. The salt will start to pull fluid out and if it is made too far in advance it will start to look wilted. You can make it the night before without the salt, and then add the salt shortly before serving.
